Uisce Irish Pub is opening its doors at a new location following a nearly two-year hiatus. After a discreet soft opening, the iconic Bellingham bar will officially welcome the public at 1409 Cornwall Ave. beginning at 4 p.m. Thursday, June 6.
First established in 2006, the original Uisce closed its 1319 Commercial St. space in August 2022. Owner Molly McGarry said she and her team “wanted to make everything perfect” before debuting the new venue, and scheduled the soft opening to coincide with the June edition of downtown Bellingham’s First Fridays.
“It’s really exciting,” McGarry said. “It’s a beautiful space, and we’ve been working on it for a year.”
McGarry said the new atmosphere is more refined and intimate compared to the previous location. She described the interior as a “labor of love,” with everything from the plumbing to electric work and even a small kitchen “built from the ground up.”
As far as drinks go, customers can expect several Uisce classics — including the Irish coffee and Old Fashioned — to reappear on the menu. She also plans to host events such as trivia, whiskey tastings and even a belated St. Patrick’s Day Party.
McGarry’s top priority, however, is to adjust to the new space and give customers a consistent, welcoming experience. She hopes the new location will become a space for people to gather and build community.
“Fine tuning takes time,” she said, “and the only way to do it is working it.”
